Winemakers Notes

Our vintage sparkling wines are a dual expression of terroir and time, showcasing the pinnacle of our estate fruit and the unique character of the growing season. Crafted following the traditional method, each parcel is hand picked at optimal ripeness and whole-bunch pressed to ensure purity. Primary fermentation is apportioned between stainless steel and seasoned oak to build layers of texture and complexity. After several months of initial lees contact, the base wines are blended to create the vintage cuvée.
A secondary fermentation in bottle captures a persistent, fine mousse, while extended aging on yeast lees imparts signature autolytic depth and elegance

Grape Variety: 68% Pinot Noir, 32% Chardonnay, Tamar Valley - Relbia Vineyard

Vintage: 2020 - cooler than average season with low yields and outstanding quality

Colour: Pale straw

Aroma: Elegant and complex. Layers of mineral notes, sea spray and oyster shell alongside citrus and red fruit. Extended aging on yeast lees derived aromas such as fresh sourdough, marzipan, brioche and toasted pine nuts.

Palate: Focused and savoury. There is a distinct saline, briny note cutting through the rich palate balanced by fine tension and chalky texture. The finish is long and precise with refreshing juicy citrus flavours.

Cellaring Potential: The wine is very tightly coiled, with the goal of retaining intrinsic, nervy tension and power, allowing for favourable complexity to develop slowly under cork. This wine will reward patience.
